It's never too early to enjoy your catch of the day, especially if you're fishing at dawn. A great recipe for the campfire, since the fillets will drip when you're moving them into the frying pan.

  • Cooking Time: 4 minutes per pan full

Ingredients : 
  • 1 tsp cooking oil
  • 4 fresh fish fillets (perch, walleye, bass, etc.)
  • 2 eggs
  • 1/2 cup flour
  • to taste salt and pepper
Required Equipment : 
  • Large cast iron frying pan
  • Paper towels
  • Large plate
  • Soup bowl
  • Spatula for flipping
  • Campfire or stove
Directions : 
  1. Heat frying pan to medium hot with cooking oil.
  2. Pat fillets dry with paper towel.
  3. Spread flour (which you have salted and peppered to your taste) on a plate.
  4. In a soup bowl lightly beat eggs.
  5. Dredge fillets in the flour and then dip into beaten eggs.
  6. Use the spatula to move the fillets to the frying pan.
  7. Fry about 2 minutes a side, turning once.
  8. Serve hot.
