Ingredients :
- 1 tsp cooking oil
- 4 fresh fish fillets (perch, walleye, bass, etc.)
- 2 eggs
- 1/2 cup flour
- to taste salt and pepper
Required Equipment :
- Large cast iron frying pan
- Paper towels
- Large plate
- Soup bowl
- Spatula for flipping
- Campfire or stove
Directions :
- Heat frying pan to medium hot with cooking oil.
- Pat fillets dry with paper towel.
- Spread flour (which you have salted and peppered to your taste) on a plate.
- In a soup bowl lightly beat eggs.
- Dredge fillets in the flour and then dip into beaten eggs.
- Use the spatula to move the fillets to the frying pan.
- Fry about 2 minutes a side, turning once.
- Serve hot.
